PÉT NAT is the short form of "Pétillant Naturel" and means nothing other than "naturally sparkling". The term stands for a natural method of producing sparkling wine that is native to France. In contrast to the champagne process, the carbon dioxide responsible for the mousseux comes directly from the first fermentation and the still fermenting wine is simply filled into the bottle with sufficient residual sugar and sealed very unpretentiously with a crown cap. The fermentation continues in the bottle and the carbon dioxide produced creates surprisingly fine bubbles.
