    Terroir: Podere Serra all’Olio – South-West facing vineyard at 150-250 meters above sea level with a steep incline. The soil consists of partly calcareous clay and partly iron-rich sand with stone deposits.

    Vinification: Hand-harvested in multiple passes with triple selection of grapes. 20-30 days of maceration (initially cold) with spontaneous fermentation in cement tanks. Twice-daily remontage for 9 to 12 days, followed by a single additional extraction.

    Aging: Malolactic fermentation in concrete or wooden tanks. 12-14 months aging in a mix of used and new barriques.

    Contains sulfites. May contain traces of sulfur, egg protein, gelatin, and milk.

The Caiarossa winery is located in the heart of the Val di Cecina, near the Tuscan coast, overlooking the islands of Elba and Capraia. Founded in 1998, the estate originally consisted only of the striking manor house and the red, iron-rich soil, which gave the winery its name.
