The estate's Premier Cru vineyards span Avenay‑Val‑d’Or, Mutigny, and Bisseuil—each imparting unique character: the clay‑limestone hills of Avenay‑Val‑d’Or lend richness and structure; Bisseuil brings minerality; and Mutigny adds lightness and finesse.

Vinification reflects a thoughtful blend of tradition and innovation: spontaneous fermentation using indigenous yeasts; aging in oak barrels, stainless steel, and concrete eggs; partial malolactic fermentation; and extended lees aging followed by careful disgorgement. Since 2022, the estate has been certified organic, and previously earned HVE3 and VDC certifications.
