BIBO RUNGE embraces a philosophy centered on the natural essence of wine, prompting every winegrower to consider how much of nature should be present in a good wine. Each vintage, they reflect on the question, “What does a good wine need?” consistently arriving at the same conclusion: “Good wine needs time.” This commitment aligns with their support for the Slow Food movement.

The producer meticulously hand-picks only the finest grapes, ensuring that each wine begins with the best raw materials. Through extended maceration periods, they extract the full potential of the grapes, followed by gentle pressing using a basket or champagner press. Fermentation occurs with natural yeasts, allowing the wines to age as naturally as possible in oak barrels.

BIBO RUNGE believes that the combination of prolonged maceration, careful pressing, and slow aging in wooden barrels forms the cornerstone of exceptional quality. This approach yields aromatic, intense wines that have had the time to fully develop their character.
