Weingut Leon Gold’s Lunar Herbs Rosé takes the structural brilliance of the original white and introduces a wild, savory botanical dimension. Built on a biodynamic foundation of organic red grape juice, this non-alcoholic sparkling alternative relies on a highly precise extraction of hibiscus, Mediterranean herbs, and alpine botanicals. It is expressly designed to deliver the depth, tension, and dry-feeling structure required for modern gastronomy, completely avoiding the synthetic "candy" aromas that plague the zero-proof rosé category.

The Profile

  • Visual: Pours a brilliant, clear light-pink with a persistent, lively perlage.

  • Nose: Expressive and multi-layered. The juicy, tart red fruit is driven by floral hibiscus, immediately layered with a vivid interplay of savory thyme and rosemary. In the background, the extraction of stone pine (Zirbe) adds a gentle, woodsy, and resinous warmth.

  • Palate: Precise and astonishingly taut. While it carries a measurable 60 g/L of natural residual sugar from the red grape base, it drinks remarkably fresh. The sweetness is expertly bound by a radiant, driving acidity and the ethereal, herbal bitterness of the botanicals. It creates a tightly knit network of flavor that finishes completely clean and mouth-watering.

Gastronomic Application

Thanks to the savory edge of the thyme and the resinous depth of the stone pine, this alcohol-free rosé alternative excels in complex food pairings where standard fruit-driven mocktails fail. Serve heavily chilled in a universal wine glass. It is a brilliant companion for earthy root vegetable courses, high-end charcuterie, or as a sophisticated standalone aperitif.
